Passing and passing again….

The method of distillation has not changed for centuries. The special Charentais stills that were used then, the "alambic à repasse", is still used today. The distillation of the Baron De Montignac Cognac is a two-stage process, and the "heads" and the "tails" of the distillation are meticulously separated, leaving only the "heart" of the spirit which will become our Cognac. This passion to detail will ultimately form the unique and distinctive character of the Baron De Montignac Cognac.
The Baron De Montignac Cognac will now rest in only the finest Limousin oak casks, carefully moving the Cognac from newer to older barrels.


Evaporation to the angels.

Slow and natural evaporation through Limousin oak casks, known poetically as the "Angels’ Share", occurs throughout our long aging process.


This process of evaporation plays a crucial role in the Cognac’s gestation and allows the Cognac to achieve a perfect harmony, while at the same time refining the aroma and leaving only the finest scents.

While maturing slowly over many long and tranquil years in our cellars, the Cognac acquires a smoothness and flavor beyond compare.

Important contribution to the consistency of the bouquet and the exceptional taste of the Baron De Montignac Cognac is without a doubt the art of blending.
